Pumpkin Banana Scones

I’m on a pumpkin baked-goods kick. This time I wanted something that needed a banana since we had some that were getting pretty ripe (and our freezer was already full of frozen bananas waiting to be baked in something).


This recipe called for a banana and seemed to have “healthier” ingredients, so I figured I’d give it a try.


I don’t know why, but I’ve always been intimidated with the thought of making scones. I thought they would be really time consuming and/or require lots of ingredients. I also thought I would somehow make the dough so it was runny and not dry and moldable like it needs to be for scones. Well, these were simple to make and so delicious. If you want to compare these to the scones from Starbucks- they don’t compare. I feel like those (and a lot of coffee shop pastries) can be so dry and chalky. These scones are anything but dry and chalky.

If you don’t have Pumpkin Pie Spice, you can substitute it with this combination of spices. I actually didn’t think I had it, I went to two different stores and they were out of it (as I’m sure a lot are at this time of year), I found this substitute online and when I went to make it I saw a box of pumpkin pie spice sitting directly in front of me on the shelf. I still haven’t learned to check my cupboards before going out to get ingredients.
