Coconut Kale Smoothie
June 5, 2012I’m sure the first word in the title had you going “mmmmm” then the second word made you go “hmmmmm??”
I enjoy making green smoothies, like this one. For one, it means I won’t throw away spoiled roughage and two, I get so many great nutrients and vitamins in one drink that can be consumed in less than 5 minutes. Who can say no to those things?!
I used a variation of this recipe. I omitted the honey and coconut extract since I thought the coconut milk would add enough sweetness and it did. I also substituted the flax seed for almonds- I’m a sucker for almonds in smoothies. One day I hope to have a Vitamix so when I make these smoothies they’ll really be SMOOTHies, but until then our blender and/or food processor will have to do. At least they turn out pretty smooth…. you just have to blend for longer.

When I handed one to Matt he took it with a worried look on his face. He then drank it with a smile on his face since it was delicious.
*Ingredients- that’s actually a frozen banana. A trick I’ve been taught is when bananas start to go bad, instead of tossing them, freeze them and they’re good for baking, or smoothies in this case. They lose a teeny-tiny bit of flavor, but that slight loss of flavor is definitely worth always having a banana for baking!
