Stuffed Artichokes

Being 50% Italian, it’s definitely a tragedy that I haven’t had stuffed artichokes until this point in my life.

 


My mom was talking about them when she was visiting last month and I haven’t been able to stop thinking about making them. On our recent produce trip to Costco they were selling artichokes in bags of 4, so it was like I had to get them. I used this recipe, but modified it slightly. I didn’t use anchovies, pine nuts or wine (just cooked them in the lemon water). Also, it says the cooking time is 1 hour… definitely not. My cooking time was closer to 30 minutes. Any longer and I don’t know what they would have turned out to be. Complete mush? They weren’t difficult to make, but kinda time consuming. There was a lot of prep-work- trimming all the leaves, opening them up, etc.

Matt and I ate all 4 in one sitting and to say we were in a state of gluttony afterwards, is an understatement.
