Dark Chocolate Chili Spiced Mango Cookies

March 9, 2011

Yup! You read that right… all that yumminess is in ONE cookie… Dark Chocolate AND Chili Spiced Mango!!!

These are so delicious! If you live near Trader Joe’s, you HAVE to make these. If you don’t live near Trader Joe’s, have someone send you a pack of the Chili Spiced Mango from Trader Joe’s and make them. I found the recipe here. The recipe makes A LOT, so be prepared to bring them to work, to parties, to the mall, to wine club, to the park, give them to the homeless, etc!

A little heads up on baking cookies, which you very well may already know, but bear with me in case just one of you doesn’t know this. If I help just one person bake a great batch of cookies- my job here is done :) After burning many-a-batch of cookies, I’ve started using an ice cream scooper to scoop out the cookie dough. This means more rounds of  cookie sheets going in the oven (12 cookies at time), but they turn out so moist and chewy. Not small, hard and crunchy. Oh and be sure to take them out earlier, rather than later since they’ll still cook a little (on the cookie sheet) once they’re out of the oven.

{Chili spiced mango- the larger the pieces, the better}

{I always love the perfect ball that brown sugar can be formed into}

{dark chocolate- I like the chunks larger, rather than smaller}

{ice-cream-scoop size}

    Barb, your cookies are amazing. I love the “heat” in them.
